Making Encanelados (Mexican Cinnamon Cookies)
Step 1: Mix all the ingerdients. Why yes, those are sticks of Crisco sticking out of the mix. Trust me, though. Trust me.

Step 2: Knead all the ingredients until it looks like this. Doesn’t that look a lot better?

Step 3: Form the dough into the cookie shape. Wouldn’t you like to know how I get those nifty ridges? Wait, that sounds dirty.

Step 4: Stick these puppies into the oven and presto! You’ve got 82 encanelados that go perfectly with a glass of milk!

Alas, I cannot pass on the recipe or Mother would have me for lunch. And yes, I did shape the cookies into the shape of a wedding cake—what do you expect from a woman with one particular Maggie Sottero dress on her mind?!?

And the final product is quite delicious…and somewhat begs for some vanilla ice cream.
Considering the chiles we have were somehow infested with moths, I might have to go up to Giant to get more. Could always pick up some vanilla ice cream while I’m there!
Oh no, really? (with the moths). Even the closed boxes? Damn. Maybe we should find somewhere else to store them next time.
It was in the oldest bag we had (wasn’t well sealed), but by the time I noticed I’d mixed in the fresher bag. So there go the chiles. :(
Well, just one bag. Maybe we can store them out on those shelves near the cheezits if we buy more.
